Easy Mexican Wraps

This recipe I created to get the entire family in the kitchen, kids can grate the cheese if they're old enough, chop and slice veg, dad can make the steak, and each member of the family can have fun putting their wraps together and of course enjoy it as family. It's also perfect for working mama's - its a 15 minute dish perfect for summer but packed with goodness.

Time: 15 minutes

Spice Level: Mild

Ingredients for 4 servings:

4 tortilla wraps

500g beef strips

1 tbsp Smoked Eastern Mix

4 tbsp sour cream

60g mature cheddar – grate coarsely

2 carrots – trim ends, peel & grate coarsely

5g fresh coriander – discard stalks

5g fresh mint – discard stalks

butter

olive oil

salt & pepper

Ingredients for 2 servings:

2 tortilla wraps

250g beef strips

½ tbsp Smoked Eastern Mix

2 tbsp sour cream

30g mature cheddar – grate coarsely

1 Carrots – trim ends, peel & grate coarsely

3g fresh coriander – discard stalks

3g fresh mint – discard stalks

butter

olive oil

salt & pepper


Preparation:

Prepare all ingredients as indicated above.

Wraps:

Place in a dry pan on high heat and warm for 30 seconds a side until golden.

Beef Strips:

Coat the beef strips in olive oil, the Smoked Eastern Mix and season with salt and pepper. Place a pan on high heat with a knob of butter. When the butter has melted, add the beef strips and sauté for 3 minutes until golden, but still slightly pink inside.

Serve:

By topping the wrap with the sour cream, grated cheese, beef strips and grated carrots. Sprinkle over the coriander and mint leaves. Wrap up and serve.
